Our beautiful red New Mexico chile pods are the flavor behind classic New Mexico sauces used for making, tamales, enchiladas, soups and stews.  The chiles have a supple red skin and are often used to make chile ristras you see hanging in food stands all over New Mexico. Both the New Mexico and the California chile are a dried form of the long green fresh, Anaheim chile.  However the New Mexico chile is a little hotter, about 2500 on the Scovile scale as opposed to the California which is only about 500.
