As seen on Bobby Flay's Food nation. This is one of those tools you have to have if you love to cook and eat Mexican food.  This great little stove-top dry roasting grill is perfect for roasting chiles, sweet peppers, tomatoes or other fresh vegetables. The grill has a cast iron frame with a sturdy stainless steel mesh cooking grid and two wooden handles. Grill diameter is 10 3/4". The grill sits easily atop most gas or electric stove burners but really works best over gas. You can also use the grill to warm tortillas or for grilling foil-wrapped chicken, fish, or other meats. 
Position the grill over one of the burner grates on your cooktop.  Turn the burner on to about medium high. Don't put the flame up so high that it can reach and scortch the wood handles.  Place the chiles on top of the grill, turning them occassionally with tongs until they are charred to your liking.  Once the chiles are charred, place them in a clean paper bag and all them to sweat for a few minutes.  Remove the chiles from the bag and peel the charred skin away.  The chiles are now ready to use in your favorite recipe.
