Whole dried ancho chiles. Ancho means "wide" in Spanish and is actually a dried poblano pepper. The ancho is part of the "holy trinity" of chiles used in mole sauces. You can use the ancho in combination with other chiles or make a simple sauce just using the single chile. For best results toast the chiles first on a hot comal or cast iron pan. Don't allow them to burn or they'll get bitter.
Anchos have a medium heat.
