Wheat Berry Apple Nut Salad

Apples, nuts and wheat berries make a sweet, flavorful and healthful grain salad.  This is a good recipe if you are looking to add more whole grains and fiber to your diet.

    • 1 cup Wheat berries
    • 1 1/2 Tbs Oil
    • 2 Tbs Orange juice
    • 1 Tbs Red wine vinegar
    • 1 tsp Coriander, ground
    • 1 1/2 Tbs Oil
    • 2 ea Granny Smith (or other) apples halved, cored, cut into small dice
    • 2 Tbs mint, chopped fine
    • Salt & pepper to taste
    • 1/2 cup Cashews; toasted then chopped
    • 6 cups water for boiling wheat berries


Place wheat berries and water in a large saucepan. Bring to a boil over high heat, stirring frequently.  Reduce heat to medium and simmer until very tender, about 1 hour and 10 minutes. Drain and transfer to a large bowl.  Add oil, orange juice, vinegar, coriander, apples, mint, salt and pepper. Toss well.   Just before serving, add cashews; mix well. 


This recipe can also be made using rice such as brown rice or red rice.
