Watergate Cake With Cover Up Icing

This recipe was given to me back in the 1970's by Daisy Buchanan.  It's one of those gooey cakes made with cake and pudding mixes that were so popular back then.

    • 1 package white cake mix
    • 3/4 cup vegetable oil
    • 3 eggs
    • 1 cup 7UP or club soda
    • 3 1/2 oz package pistachio instant pudding mix
    • 1 cup finely chopped pecans
    • 1/2 cup shredded coconut
  • Cover Up Icing:
    • 2 envelopes dry whipped topping mix (total 3oz)
    • 1 1/2 cups milk
    • 3 1/2 oz pistachio instant pudding mix
    • 1/2 cup coconut
    • 3/4 cup finely chopped pecans


Mix all ingredients together and pour into a 13"x9" pan.  Bake for 45 minutes.

Cover Up Frosting
Combine all ingredients except coconut and nuts and beat until thick. Spread on cooled cake then top with coconut and nuts.
