Watercress Pesto

Traditional pesto is made with basil but this recipe uses watercress which provides a delicate peppery bite.

    • 2-3 cups watercress leaves
    • 1/2 cup extra virgin olive oil
    • 2 tablespoons macadamia or pine nuts
    • 1-2 cloves garlic
    • Salt and pepper to taste
    • 1 lb spaghetti or pasta of choice


Place the watercress, oil, nuts and garlic in a blender and blend until smooth and bright green. Season to taste with salt and pepper.

Cook pasta according to package directions.  Combine pasta and pesto in a large pasta bowl; toss well to coat.  Serve immediately.
