Vegetable-Cheese Breakfast Roll Ups

Flour tortillas are filled with a mixture of ham, eggs, onion, mushrooms, red peppers and Jack cheese.

Ingredients

    • 4 eggs beaten
    • 1/2 teaspoon tarragon, optional
    • 1/4 teaspoon salt
    • 1/4 teaspoon coarse ground pepper
    • 2 tablespoons extra virgin olive oil
    • 1/3 cup chopped onion
    • 1/2 coarsely chopped mushrooms
    • 1/4 cup chopped red pepper
    • 3/4 cup diced fully cooked ham
    • 3 tablespoons shredded Monterey Jack cheese
    • 3 8 to 10-inch flour rtillas, warmed

Instructions

In medium bowl, beat eggs, tarragon, salt and pepper; set aside. Heat oil in large skillet over medium heat. Add onion; cook 1 minute. Add ham and pepper; cook 2 minutes, stirring once or twice. Add mushrooms; cook and stir 1 minute. Pour egg mixture over vegetables. 

Stir, scraping sides and bottom of pan 2 to 3 minutes or until eggs are desired texture. Remove from heat. Sprinkle with cheese; cover and let stand 1 minute to melt cheese.

Spoon onto tortillas: roll to enclose egg mixture
