Teriyaki Salmon

Wild caught salmon was on sale today so we decided to serve it with a teriyaki sauce.  Our fish is marinated, then grilled and finished in the sauce as it thickens on the stovetop.

    • 12 oz salmon fillet
    • 2 tablespoons sake
    • 4 tablespoons soy sauce
    • 4 tablespoons mirin or Sherry
    • 2 tablespoons sugar


Combine all ingredients except the fish in a shallow dish suitable for marinating.  Stir well to combine mixture.

Place the fish in the marinade, skin-side up.  Place in refrigerator and marinate for 30 minutes.

After 15 minutes heat a grill to medium-high heat. 

Place the marinated fish skin-side down on the grill and grill until almost cooked through. 

Set the marinade back in the refrigerator for later use.

Cooking time will vary depending on the thickness of the fillet.  Do not over cook because the fish will be heated again with the sauce.

Pour marinade into a skillet over medium-high heat.  Cook and reduce the marinade just until it begins to thicken.  Add the fish to the pan and coat with the sauce.  Cook for just another minute or two until the sauce is thick and the fish is well-coated.

Serve immediately with brown rice or farro and your favorite green vegetable.
