Sweet Potato Soup

A flavorful sweet potato soup flavored with leeks, ginger, chicken broth and cream.

    • 6 tablespoons butter
    • 3-4 ea leeks, washed well & sliced thinly
    • 6 cups chicken stock
    • 1-1/2 cup white wine
    • 1 tablespoon ginger, finely chopped
    • 3 ea molokai sweet potato, peeled & cut into 1” cubes
    • 1 ea orange, juiced
    • 1 cup milk
    • 1 cup heavy cream (or half and half to reduce calories)
    • salt (to taste)
    • pepper, freshly ground (to taste)


Saute leeks and ginger with butter In a heavy bottomed stockpot over medium heat until leeks turn soft & translucent. De-glaze pan with white wine, reduce by half.   Add Chicken stock and sweet potatoes and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 minutes. Remove from heat

Stir in the orange juice, milk and cream (or half and half). Add soup to a food processor and blend until smooth. Add salt and pepper to taste.
