Stewed Beans

Stewed beans (Feijão assado seco). A recipe from Ana's Azores collection.

    • 1 lb dried beans (red or white)
    • 1 yellow dried Onion
    • 1 tablespoon vinager
    • 1 teaspoon salt (or to taste)
    • 1 clove garlic
    • 1 teaspoon black pepper
    • 2 teaspoons oil


Soak the beans overnight. Cut the onion and garlic in pieces and fry a little in the oil. Add the beans and some vinager and just cover with water. It's faster if you use the pressure cooker if you have one.
