Steve's Szechwan Sausage Wraps


Steve's Szechwan Sausage Wraps  combines pork sausage with black bean hot sauce, water chestnuts, green onions, peanuts, and carrots and serves the mixture in Bibb lettuce cups.

1. In large skillet, cook sausage until well browned, stirring to break meat into small pieces. Drain off the accumulated fat.

2. Add the black bean hot sauce, water chestnuts, carrots, green onions, peanuts and soy sauce. Cook and stir 2 to 3 minutes or until heated through. **

3. To eat, spoon about 1/2 cup sausage mixture into center of each lettuce leaf, fold up and tuck in the edges (like a fajita).

**Optional: You can reserve some of the peanuts, onion and carrot for topping the wrap when serving
