Smoky Roasted Salsa

Smoky Roasted Salsa is a tangy combination of garlic, onion, charred fresh tomatoes, lime juice, cilantro and smoky chipotle chile paste.  You can serve this salsa with fresh tortilla chips (they are great homemade) or use it on your favorite tacos.

Instructions

Prepare Smoky Roasted Salsa

Place a 10 to 12 inch uncoated frying pan over high heat. Add garlic, onion, and tomatoes. Cook, turning often with tongs, until charred on all sides (about 10 minutes).

Remove from pan and let cool.

Cut tomatoes in half crosswise and discard seeds. In a blender or food processor, combine vegetables, paste, lime juice, oil and cilantro; whirl to desired consistency.

Chile Pastes
This recipe is for guajillo paste but the method will work for most any chile including chipotle chiles.
