Sesame Pan Seared Ahi Sashimi Salad

Recipe features fresh ahi (tuna) shiitake and enoki mushrooms, fresh greens and an Asian aioli dressing.

  • Aioli Dressing:
    • 1 whole egg
    • 1/4 cup Hoisin sauce
    • 1 tablespoon minced garlic
    • 1 teaspoon minced ginger
    • 1 lemon juiced
    • 1/4 cup ketchup
    • 1 teaspoon sambal paste
    • 1/4 cup rice wine vinegar
    • 1/4 cup sugar
  • Cajun Spice Mixture:
    • 3 tablespoons paprika
    • 1/2 teaspoon cumin
    • 1 teaspoon chile powder
    • 1 teaspoon garlic powder
    • pinch allspice
    • pinch cayenne pepper
    • 1 tablespoon fennel seeds
    • 1 teaspoon each: dried thyme, oregano, basil
  • Salad:
    • Baby greens, cleaned
    • Tomatoes, sliced
    • Cucumber, sliced
    • Carrots, julienned
    • Fresh beets, cut into curls
  • Tuna:
    • 4 ahi steaks, 6 oz each


Prepare all vegetables, keep chilled until ready to assemble salad.

Cajun Spice Mixture
Combine all ingredients together and set aside. This spice stores well in a tightly covered container, refrigerated.

Aioli Dressing
Combine all ingredients in a small bowl.  Keep refrigerated until use.

Dust tuna with Cajun spice then sear in sesame oil and refrigerate for at least one hour so fish will slice well. 

Assemble Salad
Compose greens and vegetables on chilled plates.  Slice ahi and place atop greens.  Drizzle salad and ahi with dressing.

Additional Notes

Allow 1 1/2 cup greens per person
Shiitake mushrooms, sliced and sauteed, cooled
