San Angel Roasted Squash with Red Mole

    • 4 pounds butternut squash, skinned and cubed
    • 1 jar San Angel Red (Mole Rojo) sauce
    • cilantro for garnish


Preheat oven to 350°F.

Season the squash cubes with salt and pepper. Put the squash in a baking dish and cover with one jar of San Angel Red Mole.

Bake until the squash is tender, about 30 minutes.
