Salmon Marinated with Mango, Chile Pepper, and Fig Vinegar

    • 2 lbs salmon filet
    • one scallion, finely chopped
    • 1 teaspoon lemon juice
    • 1 tablespoon fig vinegar
    • 2 chile peppers, seeded and finely chopped
    • 1 tsp extra virgin olive oil
    • 1/2 pound of mango
    • 1/2 cup of salt
    • 1/4 cup of sugar


1. Wash the salmon in cold water and dry
2. Mix the salt and sugar and rub into the salmon
3. Pour lemon juice, olive oil, chili pepper and fig vinegar over salmon
4. Place salmon in a glass dish and cover with plastic wrap, refrigerate overnight or at least 14 hours
5. Remove salmon from the marinade, dry and slice
6. Serve salmon slices with the marinating liquid and diced mango to garnish
