Roquefort Pecan Rounds

Cream cheese is combined with Roquefort and a little Cognac, then rolled in crushed pecans, chilled and sliced. the little rounds can be served with a fresh baguette, or table water crackers.  This is a large recipe so you may want to cut it in half.

  • Serves40- 1 oz slices


    • 24 ounces Roquefort cheese
    • 16 ounces cream cheese
    • 8 ounces butter
    • 2 teaspoons Cognac (or less if preferred)
    • 6 ounces crushed pecans


Blend the Roquefort, cream cheese and butter thoroughly and flavor with a little cognac. Add more cream cheese if necessary. The mixture should be quite stiff. Roll it out into a long sausage shape and then roll in crushed (not chopped) pecans. Chill the cheese roll in the refrigerator until very firm. Slice and serve with a fresh baguette or crackers.

This stores well in the refrigerator so it's a good choice to have on hand around the holidays when guests drop in.
