Roast Chicken Pradesh

default recipe image
Roast Chicken Pradesh (from Northern India)  is a flavorful Indian recipe for roasted chicken.  The spices include coriander seed, turmeric, cardamon and ginger. The recipe calls for 3, 2lb chickens but that may be difficult to come by given chickens in the U.S. tend to be at least 3+ lbs.  If you want to use one large chicken you can but you may need to adjust the roasting time accordingly.  Serve this dish with jasmine rice.

Place the chickens in the oven and roast for 45 minutes; basting the chicken with the yogurt mixture about every 15 minutes.

Slice the last 2 onions and and place them on the roasting chickens.  Roast for 15 minutes more making sure the onions are cooked through.
