Pinquito Bean Salad

Serve these beans along side BBQ tri-tip or your favorite BBQ meat.

    • 1/2 lb pinquito beans, prepared (see recipe)
    • 1/3 cup olive oil
    • 1/8 cup red wine vinegar
    • 2 green onions, chopped
    • 1/2 cup diced red onion
    • 1/2 bell pepper (red, green, yellow or combination) diced into 1/4 " pieces
    • 1 tablespoon minced fresh cilantro (you can substitute flat leaf Italian parsley if you don't like cilantro).


Prepare dried beans per the recipe provided (or use your favorite recipe). Drain

Mix oil, vinegar, lemon juice, onions, bell pepper and cilantro (or parsley) into the beans. Season to taste with salt, pepper and garlic salt. Chill for several hours or overnight. Toss before serving.

Additional Notes

Juice of 1 1/2 fresh lemons
Salt, pepper and garlic salt to taste
