Ostkaka (Ostekake)

    • 1/2 cup soft butter
    • 1/4 cup sugar
    • 1 egg
    • 2 cups flour
    • 1 teaspoon baking powder
  • Cheese Mixture:
    • 1/4 cup butter
    • 3 eggs
    • 3/4 cup sugar
    • 1 pound low fat farmer's cheese
    • 2 1/2 cups sour cream
    • 1/4 cup corn starch
    • 1 teaspoon baking powder
    • 1/2 cup currants (optional)


Stir the butter, sugar, and egg well, then add to the lour once it has been mixed with the baking powder and knead quickly into short pastry. Wrap the dough up so that is stays fresh and refrigerate for 30 minutes.

Preheat the oven to 375 degrees

Fill the bottom of a s spring form pan with half of the dough and bake for about 20 minutes in the oven. In the meantime mix together the ingredients for the cheese mixture.

Make the sides of the cake from the rest of the dough and place the cheese mixture in the baking pan.

Reduce the oven temperature to 350 degrees and bake for 60 minutes.. Leave to cool for 2-3 hours.
