Orzo Salad

This Orzo salad is jam packed with fresh, healthy ingredients including orzo (tiny pasta) spinach, tomatoes, pine nuts, parsley and chives.  This is a great recipe for your next tailgating party.

  • Salad:
    • 2 cups orzo, cooked (follow directions on package)
    • 1/2 pint grape tomatoes, cut in half
    • 2 cups baby spinach leaves
    • 1/2 cup goat cheese
    • 1/2 cup pine nuts, toasted
    • 2 tablespoons fresh flat leaf parsley, thinly sliced
    • 2 tablespoons fresh chives, chopped
  • Vinaigrette:
    • 1 teaspoon Bone Suckin' Poultry Seasoning
    • 2 tablespoons red wine vinegar
    • 1 shallot finely chopped
    • 1 clove garlic, finely chopped
    • 1/4 cup extra virgin olive oil
    • 1/4 cup basil, thinly sliced


Whisk together the vinegar, shallot, and garlic in a medium bowl to blend. Drizzle in the olive oil very slowly while whisking, until ingredients are fully incorporated. Stir in basil and season with sea salt and pepper.

Toss the pasta, tomatoes, spinach, goat cheese, pine nuts and parsley in a large bowl with enough vinaigrette to coat. Season the salad with sea salt and pepper and sprinkle with chopped chives. Serves 4.
