Open Faced Toasted Cotswold and Black Forest Ham Sandwiches

These are great for breakfast served with fresh fruit, or for lunch with a fresh green salad.  Eggs are combined with shredded cheese and mustard.  The mixture is placed on multi-grained bread with ham slices then baked.

  • Serves 6


    • 3 eggs
    • 2 1/2 cups shredded Cotswold Cheese with Chives and Green Onions
    • 1 tablespoon whole grain mustard
    • Freshly ground pepper to taste
    • 6 (1/2-inch thick) slices multi-grain bread, cut slightly on the diagonal
    • 3 slices Black Forest Ham, cut in half


Preheat oven to 425°F and line a baking sheet with foil.

Beat eggs well in a medium bowl; stir in cheese, mustard and pepper.

Place bread on prepared baking sheet and spread about a spoonful of cheese mixture and a piece of ham on each. Spoon remaining cheese mixture over top.

Bake for 10 to 12 minutes or until hot and bubbly and cheese is lightly browned.
