Oatmeal Cranberry Walnut Cookies

I love a good oatmeal cookie and this recipe for Oatmeal Cranberry Walnut Cookies fills the bill.  This basic oatmeal cookie adds walnuts and dried cranberries to make a tasty but not overly sweet cookie.

Preheat oven to 350F

Combine eggs and vanilla in a medium bowl, beat well.

Combine and mix well: Flour, baking soda, cinnamon and salt.  Add the combined ingredients to the egg mixture and mix well to combine.

Fold in the oats, cranberries and walnuts, mixing well until combined.

Drop the cookie by rounded tablespoonfuls onto ungreased cookie sheets.

Bake the cookies for 8-10 minutes until lightly golden brown.  Allow the cookies to cool for a minute on the cookie sheet then place on a wire rack to finish cooling.

You can store the cookies in a jar with a tight-fitting lid.
