Nutty Turkey & Blue Cheese Salad

Another good use for leftover turkey.  Combines mushrooms, onions, salad greens and turkey dressed with a yogurt, blue cheese, pecan dressing.

  • Dressing:
  • Salad:
    • 4 Cups Lettuce of your choice (torn)
    • 2 cups fresh Spinach (torn)
    • 1 cup fresh Mushrooms (sliced)
    • 2 Cups cooked Turkey (diced)
    • 1 cup Red Onion Rings


Combine Salad Ingredients. Cover and chill.

Combine yogurt, nuts, blue cheese, sugar, salt, celery seed and basil. Mix well. Pour dressing over greens and toss to serve.
