My Killer Kale Salad

Healthy, raw,  and yummy all at the same time.  My Killer Kale Salad is nutrient-dense and offers 132mg of Phytosterols,  852mg of Potassium,  12,900 IU of Vitamin A, 7042 mcg Beta Carotene and more (see all nutrition below).  I love this because the seeds and sprouts are crunchy, the beets add nice bit of sweetness and the kale adds a nice texture.  If you eat dairy feel free to crumble in some blue or feta cheese.  You may want to use apple cider vinegar if you prefer.  The recipe is for two good dinner-size portions.  If you eat bread I would choose a whole wheat-walnut French bread.

Ingredients

    • 2 cup kale
    • 1/2 cup shredded beets
    • 1 cup red cabbage, shredded
    • 1/4 cup onion, chopped
    • 1 cup broccoli florets
    • 1/2 cup red bell pepper, cut into 1/4" cubes
    • 1/2 cup broccoli sprouts
    • 14 cup mixed sprouted seeds (peas, lentils, garbanzo beans)
    • 1/2 cup leeks, thinly sliced
    • 1/4 cup sunflower seed kernels
    • 2 tablespoons olive oil
    • 1 clove garlic
    • 1/2 teaspoon kosher salt
    • 2 tablespoons lemon juice, freshly squeezed
    • 1 tablespoon balsamic vinegar or apple cider vinegar

Instructions

Prepare The Kale

Combine kale, salt and lemon juice and half the olive oil in a medium bowl.  Kale can be pretty tough when it is raw so to remedy that simply massage the mixture for about 2-3 minutes until the kale starts to soften.  

Add all the vegetables to the bowl.

In a small bowl mix the remaining olive oil (more if you wish) and vinegar. Use a garlic press and press the clove into the oil and vinegar mixture.  Pour the mixture over the vegetables and toss until combined.  Taste and adjust seasonings as needed.

Divide the salad and place on 2 chilled plates.  Top the salads with the sprouts, then the sprouted seeds, then sunflower seed kernels.  Serve!
