Another version of this Australian confection uses margarine, sugar, flour, vanilla, eggs and grated coconut.

    • 2 cups sifted flour
    • 3/4 t cream of tartar
    • 1/4 t baking soda
    • 1/8 t salt
    • 1 cup sugar
    • 1/2 cup milk
    • 2/3 cup butter or margarine
    • 1 t vanilla extract
    • 2 eggs
    • 1 cup grated coconut


Preheat oven to 350° F. Cream together the butter. sugar and vanilla extract. Beat in the eggs, one at a time. Sift together the dry ingredients and blend into the creamed mixture, alternating with the milk. Grease a 10 inch square pan lined with paper and grease the paper. Put the mixture into the pan and bake 35 40 minutes. Cool, tum out on a rack, and when cold, wrap in foil and let stand in refrigerator 24 hours. Cut into 2 inch squares, dip in chocolate frosting and roll in finely grated coconut.
