Ketjap Manis

Also spelled kecap manis, this is a sweet Indonesian sauce.  This recipe combines sugar, soy sauce, lemon grass, garlic and star anise. This recipe is by Heidi Haughy Cusik as it appeared in the The San Francisco Chronicle, 7/1/92.

Caramelize 3/4 cup sugar in a heavy pot.

Gradually stir in the rest of the ingredients.  Bring to a boil, lower heat and simmer for 10 minutes.

Cool and strain through cheesecloth.

Makes about 1 1/4 cups. Stores indefinitely in the refrigerator.
