Homemade Cherry Gelatin

Fresh fruit gelatin is almost as easy to make from scratch as it is from a box.  You can make the gelatin sweetened, unsweetened, or sweetened with a sugar substitute.

    • 2 cups tart (Montmorency) unsweetened cherry juice
    • 1/4 cup granulated sugar or equivalent of your favorite sugar substitute such as Splenda or Stevia
    • 1 envelope powdered gelatin (such as Knox brand)


Heat 1 cup fruit juice in small saucepan until it just simmers (no longer).

Turn off heat and stir in sugar or sugar substitute or leave out if you prefer.

Place the last cup of juice in a medium bowl and sprinkle gelatin over then stir the mixture.  Allow it to sit for about 2 minutes then stir the mixture again.

Combine the juice and gelatin mixture with the previously heated juice stirring well to combine then pour into individual 4 oz ramekins or molds.  Allow to chill at least 4 hours.

If you used molds then you should dip each mold (bottom only, don't allow water to flow in) in a bowl of warm water. This will help loosen the gelatin from the mold. Then tap out onto a serving plate.
