Heart of Palm with Orange and Saffron Vinaigrette

Fresh heat of palm is combined with oregano, saffron, orange juice and white wine vinegar.

    • 12 fresh heart of palm slices, about 2" x 1/8"
    • 1/2 teaspoon dried, crumbled oregano
    • 1/4 teaspoon saffron threads, crumbled
    • 2 tablespoon orange juice
    • 2 tablespoon white wine vinegar
    • 1 tablespoon olive oil


Place hearts of palm slices in a serving bowl.

Combine dried oregano and saffron in a small bowl with 1 tablespoon orange juice. Allow the mixture to stand at least 2 minutes so flavors will blend. 

Use another small bowl and  whisk together remaining juice, vinegar, and oil. Add saffron mixture and whisk to combine.  Pour over palm hearts and marinate for about 1 hour.
