Hawaiian Mango Bread

Hawaiian Mango Bread is a quick bread something like banana bread except it uses sweet ripe mangoes.  This is Chef Allen's take on a Hawaiian classic.  If you prefer you can puree both mangoes.  We think the addition of the cubes makes for a both pretty and tasty presentation.

Preheat the oven to 350F

Prepare Batter

In a large mixing bowl cream the butter and sugar. Add the pureed mango, egg, vanilla, and lime
juice.

In a separate large bowl, combine the flour, baking powder, baking soda and cinnamon. Add the mango mixture to the flour mixture stirring until the dry ingredients are just moistened.  Gently fold in the walnuts and diced mango.

Bake The Hawaiian Mango Bread 

Coat a 9x5x3 inch non stick loaf pan with non stick cooking spray.  Pour the batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted into the center, comes out clean.

Place the pan on a rack and cool in the pan 10 minutes then remove the bread from the pan.   Allow the mango bread to cool at least 1 hour on the rack before serving.
