Ham Olive and Red Bell Pepper Salad


The recipe goes together in minutes and offers a total of 5g of carbohydrate.  For best results use reduced sodium ham.

    • 2 1/4 ounces (1 small can) black olives sliced
    • 3/4 cup celery chopped
    • 1/2 cup red bell pepper, chopped
    • 6 ounces ham, chopped into small 1/4 dice
    • 1 1/8 ounces scallions or Green Onions (1 large)
    • 3 tablespoons mayonnaise (no carb such as Best Foods)


Combine all ingredients in a small bowl and mix to combine.  Cover and refrigerate for about 1 hour or more before serving (to allow flavors to develop).
