Gruyere and Ham Puffs

This is a super easy appetizer recipe for Gruyere and Ham Puffs.  You simply roll out puff pastry sheets, top it with mustard, Gruyere and thin ham slices.  Bake, slice and serve!  As a time saver ask the deli to slice the Gruyere for you.  If you want to spend a little less use a good quality Swiss cheese such as Emmenthal.  We used Black Forest ham but you could even use deli boiled ham.

Preheat the oven to 450 degrees F

Line a baking sheet with parchment paper of use a Silpat mat if you have one.

Roll out one sheet of the puff pastry on board or other smoother surface which has been floured to keep the dough from sticking.  The sheet's final size should be 10" x 12".   Use a pastry brush to brush the mustard over the surface of sheet of pastry leaving a 1" border along all 4 edges.

Now layer the ham slices on top of the mustard, followed by the cheese making sure to maintain the same 1" border along the edges.

Brush the bare edges with the egg wash.

Roll out the second sheet of puff pastry and lay it on top of the other sheet with the ham and cheese aligning the two sheets as closely as you can.  If the edges are uneven you can trim off any excess as needed.  Press the edges together to seal the pastry.

Brush the top of the pastry with the egg wash.  Make a few diagonal slashes through the top of the pastry to allow steam to escape (like you would a pie crust).

Place the pan in the preheated oven to bake until nicely puffed up and brown about 20 to 25 minutes.  Remove the baked pastry to a cooling rack.  Once the pastry has cooled for a few minutes (8 - 10 minutes), slice into squares and serve. 

These pastry bites freezer very well.  To reheat, place the pastries on a baking sheet then bake in a preheated oven at 375F for about 10 minutes.  Check after 8 minutes to make sure the pastries don't over-brown.
