Grilled Hoisin BBQ Papio

Papio (or ulua) fillets are marinated in a Hoisin BBQ sauce then grilled.

Ingredients

    • 4 white ulua fillets (5 ounces each, from 5 to 6 pounds whole fish)
  • Hoisin BBQ Sauce:
    • 1 cup hoisin sauce
    • 1/2 cup ketchup
    • 3 tablespoons sugar
    • 1/4 cup water
    • 1 tablespoon sesame oil
    • 1/2 tablespoon toasted sesame seeds
    • 1/4 cup salad oil
    • 1 tablespoon chili garlic sauce
    • 1/2 tablespoon minced garlic
    • 2 tablespoons ginger juice

Instructions

Combine sauce ingredients and mix well. Pour 2 cups sauce over fish and marinate 1 hour.

Grill fillets 3 minutes per side, brushing periodically with remaining sauce.
