Favorite Pork Loin Roast

GourmetSleuth's Favorite Pork Loin Roast.  This is our favorite and simple method of roasting a pork line roast using a fresh herb rub. Don't substitute dry herbs, it will not be at all the same. We've roasted a small 2lb roast up to a roast that was over 4lbs, the recipe works well for any roast size.  Just increase the rub for roasts larger than 3lbs.

Remove the roast from the refrigerator about one hour before you are ready to start the roast. The cooking time shown was for a 3lb roast.

Preheat the oven to 450 degrees

Combine all the ingredients except for the pork in a small bowl and mix well to incorporate. (I like to use my fingers).   Spread the mixture over the pork roast then place the roast in a shallow roasting pan on a rack.

Place roast in the oven and turn the heat down to 375 degrees and roast until done, about 20 -25 minutes a pound until the internal temperature reaches 145.

Additional Notes

Fresh herbs, chopped fine. We usually mix, tarragon, thyme, marjoram or oregano.
