Fresh Corn and Chicken Salad

This is an excellent corn salad recipe adapted from a Food Network episode.  It uses fresh corn, basil, scallions, tomatoes and chicken.   Our recipe serves 2 but you can easily double it if you like.

  • Dressing:
    • 2 tablespoons olive oil
    • 1 tablespoons white wine vinegar
    • 1/4 teaspoon kosher salt and freshly freshly gound pepper to your preference
  • Salad:



Combine the vinegar, salt and pepper in a small bowl and gradually whisk in the oil starting with a few drops at a time.  Set aside.

Prepare The Salad

Use a corn removal tool if you have one, or use a small sharp knife to remove the corn from the cob.  You should have about 2 cups.  Add the tomatoes, mozzarella, scallions and chicken cubes.  Pour the dressing over the salad and toss gently to coat.  Let the salad sit for at least one hour, and two is even better.

Right before serving top the salad with the torn basil leaves and gently toss.
