Firkin Lobster Tacos

Firkin brings elegance to tacos.  Succulent lobster is mixed with chives and butter then lightly sauteed.  The mixture is combined with chipotle mayonnaise, queso fresco and pico de gallo.  OMG!

    • 4 Corn Tortillas
    • Peanut oil for frying
    • Diced tomatoes
    • Chopped Chives
    • Sour Cream
    • Shredded Cabbage
    • Crumbled queso fresco


1. Heat peanut oil in a pot large enough to submerge a tortilla fryer by 2 inches 375 degrees. Buy store taco shells only if you absolutely must. *This is the most difficult part.*

2. Load tortilla fryer basket with 4” corn tortillas and fry until crisp.

3. In a sauté pan, toss chopped lobster, diced tomatoes, and chives in olive oil (pommace oil is our favorite for sauté because it has a higher flashpoint) then add a big noisette of garlic butter to finish the lobster mixture.

4. Combine lobster mixture, chipotle mayonnaise, pico de gallo, shredded cabbage, sour cream, and queso fresco into the “taco shells”

5. Eat with a big smile and a glass of dry Riesling or fine Pilsner beer

Cleaned Maine lobster meat. Tail, claws, tomalley, and roe, coarsely chopped.
Firkin garlic butter (chopped garlic, white wine reduction, salt, parsley)
Chipotle Mayonnaise (pureed tinned chipotles with adobo sauce, mayonnaise)
Pico de Gallo (finely chopped tomatoes, onions, and cilantro)
