Fajita Chop With Simple Citrus Salad Dressing

Fajita vegies are combined with rotissie chicken, baby greens and salsa.

    • 1 (14-ounce) roughly chopped package of fajita mix from produce department (ready-sliced red onions, tri-colored bell peppers and cilantro)
    • 2 cups ready-cooked shredded chicken
    • 2 to 3 handfuls mixed baby lettuce or arugula
    • 1/2 cup drained green salsa, pick your heat
    • 3 tablespoons of your favorite savory vinaigrette


In a medium bowl, toss the fajita mix, chicken and greens. In a separate large bowl, combine the green salsa with the vinaigrette. Add the fajita ingredients to the large bowl with the dressing ingredients. Toss from bottom up.
