Crawfish Etouffee

Crawfish tails are simmered in a mixture of butter, onion, bell pepper, garlic and Creole seasonings then garnished with green onions and chopped parsley.

  • Serves4-6 servings


    • 1 to 1 1/2 sticks butter
    • 2 tsp salt
    • 1 tbsp flour
    • 1 med onion, chopped fine
    • 1/2 bell pepper,chopped fine
    • 2-3 pods garlic,chopped fine
    • 1 lb crawfish tails w/ fat
    • salt and pepper to taste
    • LACRAWCO Creole Seasoning
    • 3-4 green onions,chopped
    • parsley,chopped


Melt butter in skillet--Add flour and salt until blended

Add onion, bell pepper, and garlic--Cook until tender

Add crawfish and cover--Cook 15-20 minutes on low heat

Add salt, pepper and creole seasoning to taste--Add green onions and parsley and simmer until seasoning blends

Serve over rice with hot french bread.

Note: Alligator meat or shrimp may be substituted for the crawfish.
