Clam Quiche

This simple recipe uses canned clams, or use fresh if have them, gruyere cheese, half and half and eggs.  We added some optional chopped scallion.

Bake the pie shell for 8 minutes at 350F.  Remove from oven and set aside.

Combine the eggs, half and half and salt and pepper in a medium bowl and beat well to combine.

Stir in the cheese, clams and scallions if using.

Pour the mixture into the pie shell and return to the oven and bake for 45 minutes or until set.
