Citrus Chile Negro Marinade

A flavorful marinade made with beer, key lime juice, cilantro, brown sugar, toasted chile negro, cumin, Mexican oregano, garlic and parsley.  Use with any meat or chicken.

    • 2-1/2 cup fresh-squeezed orange juice
    • 1 bottle red stripe beer
    • 2 cup key lime juice
    • 4 cup cilantro, chopped
    • 1/4 cup dark brown sugar
    • 3 chile negro, toasted lightly, stem and seeds removed, ground
    • 20 cloves garlic, minced
    • 1/2 cup fresh oregano leaves, minced
    • 1/4 cup ground cumin
    • 1/4 cup Italian parsley
    • 5 tablespoon kosher salt


Mix and use then cover  your meat of choice.  For best results allow meat to marinate overnight or a minimum of 1 hour.
