Chunky Tomato Basil Soup

“Gazpacho’s Quicker, Slicker Cousin” A gorgeous, low-cal soup that’s big on flavor but little on time.  This recipe relies on the use of the freshest, ripe heirloom tomatoes as well as fresh basil, and a pre-made Balsamic Fig Dressing.

    • 3 to 4 cups colorful heirloom maes, chopped and drained
    • 10 fresh leaves of basil
    • 2 to 3 tablespoons onion, ready-chopped
    • 3 tablespoons Stonewall Kitchen’s Balsamic Fig Dressing
    • Dash of cayenne pepper
    • Dollop of sour cream
    • Pinch of fresh basil
    • Handful of croutons


Place all ingredients in a food processor or blender. Process until chunky. Careful not to over-process. Garnish with the sour cream, fresh basil or croutons.
