Chile Cream Sauce

A quick to make sauce you can use over meats, enchiladas or vegetables.  You can also use this cream sauce to spice up soup.

  • ServesAbout 2 1/2 to 3 cups


    • 1/4 cup chile paste (such as ancho, guajillo or chipotle)
    • 3 cups heavy cream
    • Kosher salt to taste


Combine cream and chile paste in a medium saucepan.  Bring to a boil and reduce by about 1/4 until thickened and coats the back of a spoon.  Add salt to taste.
