Broccoli Rabe With Italian Sausage

Broccoli rabe sauteed with oregano, white wine, onion, garlic, red bell pepper, and Italian sausage.

    • 1 pound mild Italian sausage, cut into 2 inch chunks
    • 1/2 cup dry white wine
    • 1 small red onion, diced
    • 4 garlic cloves, pressed
    • 2 pounds Broccoli rape
    • 2 red bell peppers, cut into 1/2 inch slices
    • 2 teaspoons dried oregano


Put sausage in a large skillet. Add wine and cook covered over medium heat covered. If liquid has evaporated, add a little water to the pan. Sausage must be brown on all sides. Take sausage out and set aside. 

In the sausage fat, sauté garlic and onion. If there is not enough fat, add a few tablespoons olive oil to the skillet and continue. When translucent, add broccoli rape, bell pepper, oregano, salt and pepper and cook, covered until soft. 

Add sausage and stir. Cook five more minutes and serve.

Extra virgin olive oil (as needed)
Salt and black pepper to taste
