Black Beans With Papalo

Papalo is a Mexican herb used in salsas, soups, stews and other specialty dishes.  In this recipe we use papalo as we would epazote.

Add 2 teaspoons corn oil to a medium size, heavy sauce pan and place over medium-high heat. Add the garlic and onion and cook just until soft. Add the beans and chile powder and stir gently to mix. Turn heat to medium and cook until heated through. Check for seasonings, add salt and pepper as needed. Add papalo, stir in then serve.
