Bilberry Jam

Bilberries, also called European Blueberries make a nice tart jam.  This very simple recipe uses fresh bilberries, lemon juice and sugar.

    • 2 lbs fresh bilberries
    • 1 1/2 lb granulated sugar
    • 1 lemon juiced


Wash fruit in cool water.  Place fruit in a large pan and crush  using a wooden spoon.  Add lemon juice and simmer mixture until the berries are soft. 

Add sugar and bring the mixture to a boil and cook until the mixture sets.  The jam can now be used, refrigerated or canned into sterilized jars.
