Berkshire Blue Cheese Bread Pudding

Berkshire Blue Cheese Bread Pudding is a savory bread pudding includes leeks, garlic, mushrooms, and porcini powder and porcini oil and of course Berkshire Blue Cheese.  If you can't find Berkshire Blue you can substitute another blue vein cheese such as Danish Blue or Maytag Blue Cheese.

    • 1 pound crumbled Berkshire blue cheese
    • 1/2 loaf of French bread cut into 1/4” cubes
    • 1/2 cup diced leeks
    • 2 cloves elephant garlic, minced
    • 2 tablespoons melted butter
    • 2 teaspoons porcini powder, or more as desired
    • 1 pound mixed varieties wild mushrooms
    • 1/4 cup olive oil
    • 1 quart milk
    • 8 each whole eggs plus 4 egg yolks
    • 1 teaspoon porcini oil , or more to taste
    • 1 each salt and pepper to taste


Preheat Oven 350F

Brush a glass 9x13 oven-proof baking dish with the melted butter. 

Place the bread cubes in the dish to form an even layer. 

Sprinkle porcini powder, porcini oil, salt & pepper over the bread cubes. 

In a 2-quart saucepan, heat the milk until scalded. 

Pour the scalded milk into the eggs stirring constantly. 

Heat olive oil in a saute pan until a haze forms. Saute the leeks, garlic and mushrooms until limp. Add to the custard mix. 

Pour the custard mushroom mix over the bread, sprinkle on the crumbled Berkshire Blue and cover with foil. 

Bake @ 350° for 40 minutes. 

Cool and cut for service.

This dish makes an excellent side dish with roasted beef, pork or chicken.
