Basic Texas Red Chili

This Texas style chili recipe uses a combination of fresh and dried chiles, beef round steak, garlic and onions.

  • Serves 6


    • 3 lb beef boneless round steak, cut into 1" cubes
    • 1 cup onion, finely chopped
    • 4 ea cloves garlic finely chopped
    • 1/4 cup vegetable oil
    • 2 cup tomato puree
    • 2 tablespoons dried New Mexico, ground
    • 1 teaspoon cumin seed, ground
    • 1 teaspoon coriander; ground
    • 4 ea anaheim chiles, seeded and chopped
    • 4 ea jalapeno chiles, seeded and chopped
  • Serve With:
    • sharp cheddar cheese, shredded
    • corn  or flour tortillas
    • cooked pinto beans


Cook and stir beef, onion and garlic in 4-quart Dutch oven until beef is brown. Stir in remaining ingredients except cheese, tortillas and beans.

Heat to boiling; reduce heat. Cover and simmer, stirring occasionally, until beef is tender, about 2 hours.

Serve with cheese, tortillas, and beans.
