Asperso (Herbes de Toscane)

Asperso is Tuscan seasoning made with salt, peppercorns, juniper berries, sage, rosemary, thyme, and red chili peppers. Use as a rub on meats.

To use; the mixture is crushed with a mortar and pestle and then sprinkled on meats prior to cooking.

    • 1/4 cup coarse sea salt
    • 1/8 cup whole black peppercorns
    • 1/2 tsp juniper berries
    • 1/2 tsp red pepper flakes
    • 1 tbsp dried sage
    • 1 tbsp dried rosemary
    • 1 tbsp dried thyme


Place all ingredients in an earthenware jar and allow to infuse at least 1 week.

Grind coarsely in a mortar and pestle or use a burr (coffee) grinder.

Sprinkle on meat about 1 hour before cooking.
