Apple Dapple Cake

This is probably one of the best cakes I've ever eaten.  It's a simple cake recipe but what really makes it delicious is the glaze that is drizzled over the top.  My aunt gave me a huge pile of apples from her tree in Mt. View, California and with the apples she gave me this recipe.  I also used some of them for this "healthier" Fresh Apple Cake which we loved too.

    • 2 cups sugar
    • 1 1/2 cups corn oil
    • 3 each whole eggs
    • 3 cups unsifted all-purpose (plain) flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 3 cups finely diced apples
    • 2 cups pecans, chopped (you can substitute walnuts if you prefer)
    • 2 teaspoons vanilla extract
  • Glaze:
    • 1 cup dark brown sugar
    • 1/4 pound butter
    • 1/2 cup heavy cream


Preheat oven 325F

Combine sugar and oil and beat the mixture well.  Add the eggs, one at a time.

Sift the dry ingredients together and stir into the egg mixture. Beat in the apples, nuts and vanilla.  Pour the mixture into a buttered spring form tube pan.

Bake about 1 hour or until a toothpick inserted in the center comes out clean.

Combine the glaze ingredients in a medium saucepan. Boil the mixture for about 3 minutes.

Set aside 1/3 cup of the glaze and pour the rest of the glaze over the the hot cake. Allow the cake to cool completely then remove it from the pan onto a serving plate.

Right before serving, pour the last 1/3 cup of glaze over the cake.
