“A Topless Treat” A marvelous Italian appetizer made with paper-thin slices of raw beef

  • Serves 4


    • 4 to 5 slices of baguette, ciabatta or olive bread, asted
    • 2 tablespoons olive oil
    • 2 tablespoons Dijon mustard
    • 1 bunch arugula
    • 4 or 5 slices of rare roast beef
    • 4 or 5 thin shavings of Parmesan, Manchego Asiago
    • Dash of fresh ground pepper


Brush each bread slice with olive oil and mustard. Top each with a small handful of arugula and a slice of roast beef.

Garnish with a thin shaving of cheese and pepper. Dinner is served.
