Almond Sunshine Cake


This is my variation of an Epicurious recipe for a simple and completely awesome cake called an Almond Sunshine Cake.  It only uses a few ingredients, eggs, butter, sugar, fresh orange zest, flour, almond flour, almond extract, butter, sliced almonds and sanding sugar. Each slice, 1/10th of the cake, is only 219 calories, 13g fat, 23g of carb.

    • 1/2 cup butter (1 stick, melted and cooled) plus more for pan prep
    • 1/2 cup all-purpose flour (plus more for pan)
    • 1/4 cup almond flour
    • 3/4 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons grated orange zest
    • 1 teaspoon almond extract
    • 1/2 teaspoon kosher salt
    • 1/4 cup sliced almonds
    • 1 each sanding sugar


Preheat oven to 350°F. Butter and flour 9-inch tart pan.

Whisk eggs, granulated sugar, almond extract, and salt in a large bowl until frothy and pale, about one minute until the mixture thickens and the eggs are lemon-colored.

Add the butter, all-purpose flour, almond flour and orange zest and stir until incorporated.

Pour the mixture into prepared tart pan. Top with almonds and sanding sugar.

Bake cake until top is golden brown and a toothpick inserted into the center comes out clean about, 20–25 minutes.

Transfer pan to a wire rack and let cake cool slightly before serving.


This cake is simple and delicious served with coffee or tea.

Some Additional Tips

Find almond flour at well-stocked grocery stores.  Typically Trader Joes and Whole Foods carries it or get it online at Amazon.  Bob's Red Mill is a good brand.

If you don't have sanding sugar you can leave it off or find it online or Williams Sonoma and Sur La Table usually stock it.
